Salsify, Tragopogon porrifolius
An old-fashioned root vegetable that grows long, carrot-like roots.
Salsify is also known as oyster plant because the roots taste slightly of oysters. They are used in the same way as carrots, parsnips and scorzoneras such as for soups, stews or simply as a vegetable side dish.
Salsify is grown in the same way as carrots.
